Inspector notes: Observed cooked sausage with an internal temperature range of 77F-82F located in a pan under the flat top grill. Per PIC, the sausage is normally in the prep table and is reheated on the flat top when an order comes in. The sausage has been out for less than 2 hours prior to inspection. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above
