Inspector notes: Mechanical warewashing machine behind bar measured 0 ppm available chlorine while in use during inspection. It was determined that the detergent and sanitizer bottles had been swapped and were fixed at time. Service call was also placed and machine will not be used until it is serviced. Please ensure chlorine sanitizers are maintained between 50-100 ppm for effective sanitizing of wares

Inspector notes: Observed black beans in hot holding on the cook line with an internal temp of 58*F. Time/temperature control for safety foods must be rapidly reheated to 165°F within 2 hours prior to hot holding. Placing the beans into the hot holding unit is not a proper method of reheating. PIC stated the beans had been placed into the unit 15 minutes prior and placed the beans onto the flat top to properly reheat to 165*F
