Inspector notes: Observed employee touching the swinging doors of the coffee area and then touch the computer screen to take an order and scoop ice for a drink without washing hands. Also observed in the back of the house ice in the basin of a hand wash sink. Discussed with person in charge (PIC) hand wash sinks are for hand washing only and one shall properly wash hands any time contamination occurs such as touching a barrier and a computer/phone. PIC cleared the ice out of hand washing and had employee wash hands at time of inspection

Inspector notes: Observed containers of a soft blue cheese, homemade salsa and shredded cabbage date marked with prep date of 2/18 to 4/1. Discussed with PIC RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection
