Inspector notes: Observed cooked green beans and turkey gravy with internal temperatures ranging form 113-118*F and 127-133*F, respectively. Per logs, the foods were reheated to above 165*F at 10am (observed at 10:45am). PIC stated the foods took a while to move into the hot case and upon reheating. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection

Also observed packaged tamales with pink fuzzy organic matter in deli display case. All items were discarded by PIC at time of inspection. All food must be in good condition, safe, and unadulterated. All adulterated food was discarded at time of inspection

Inspector notes: Observed cooked gravy, cooked chicken tenders, cooked fries, cooked meatballs, cooked mac and cheese, cooked corn dogs, baked chicken, and cooked sauced tenders in hot holding display case at 100-115'F. Employees had log sheets showing products were reheated between 8:30 AM-10 AM, more than 4 hours prior to inspection. No log sheets were available for hot holding monitoring of hot case and last log sheets available were from 11/12. All TCS foods improperly hot held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above
