Inspector notes: **2nd repeat** Observed chicken wings, grilled and fried chicken, and fried potato wedges hot holding near the center of the hot case with internal temperatures ranging from 110-130*F when measured with a probe thermometer. According to person in charge and temperature log, all items had been cooked and placed in the case less than 2 hours prior. Because the hot case was already turned to the highest setting, discussed adding items like wings and chicken pieces to the time as control policy until hot case can reliably hot hold TCS foods at 135*F or above. All items were recorded to be discarded after 4 hours from the time they were put in the hot case

Discussed options to use deep pans to ensure temperatures remains above 135*f when opening and closing case. According to their logs food is discarded within 4 hours, however instructions indicate that food must be at 140*f at all times. All hot TCS foods must be above 135*F when hot holding

Inspector notes: Observed bbq wings, buffalo wings, chicken tenders and baked chicken with an internal temperature of 120*f in hot case. After discussion, it was determined that the wing sauce is being stored at room temperature or in refrigerator prior to putting on wings. Discussed importance of heating sauce to prevent a drop in temperature on TCS foods. All foods had been stocked within 1 hour prior to inspection and were reheated to 165*f. Please maintain daily temperature logs to monitor temperatures
