Inspector notes: Observed baked chicken in the display hot holding box with an internal temperature range of 120F-125F. Per PIC and cooking log, the chicken was cooked less than 2 hours prior to inspection. Deli manager voluntarily discarded chicken at time. The other TCS food items in the case were all at proper hot holding temperature. PIC put in a service ticket to have the display case looked at by maintenance. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above
