Inspector notes: In service deli hot case, observed corn dogs and baked and fried chicken pieces/97-127F. In grab and go case/104F, observed rotisserie and piece chicken/117-125F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown which resulted in the violation. All TCS foods improperly hot held were within four hours of preparations and were reheated to 165°F at time of inspection. Staff to use another hot case

Inspector notes: Observed baked chicken, mashed potatoes, corn, and mac and cheese in front steam table at 120°F, 110°F, 110°F, and 114°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Per person in charge, mashed potatoes, corn, and mac and cheese were placed in the steam table between 10am-11am (2-3 hours prior to inspection) while the baked chicken had been placed in the table within the hour. PIC disposed of the mashed potatoes, corn, and mac and cheese but kept the baked chicken to reheat back to 165°. Maintenance was also called to check the steam table for repair
