Inspector notes: Observed several empty single use larger containers of pickles and sauerkraut throughout the facility. Per PIC the larger containers are only used for water and chemicals for the cleaning. Observed on the cookline an employee use a sauerkraut container with black grease/organic matter inside and out of the bucket, fill up water from the hand washing station and dump into the boiling pot for boiling vegetables. Discussed with PIC to discontinue use of single use buckets for all foods and label with 'chemical use only' and follow up with staff. Handwash sinks are for hand washing only. Embargoed the steamed mixed vegetables and PIC discarded at time of inspection. Discussed with PIC All food must be in good condition, safe, and unadulterated. All adulterated food was discarded at time of inspection
