Inspector notes: Observed walk-in ceiling refrigeration unit next to walk-in cooler door frozen over behind fan blades. Walk-in cooler maintained 41°F. Observed chlorine warewashing machines with improper sanitizer levels. Chlorine warewashing machines were not being used by establishment at time of inspection All equipment shall be maintained in good repair at all times. Inspector notes: Observed accumulation of food debris, dust, and grime throughout establishment. Accumulation was observed along floor of main cookline, sides of cooking equipment, freezer/cooler/sink handles, soap/paper towel dispenser levers, large dry storage area across from front desk, around outdoor receptacle area, and along ducts/vent covers. Physical facility shall be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Discussed limiting and preventing pest attractants with PIC.
