Inspector notes: Observed a large pan of cooked peas, corn, and carrots in the hot box with an internal temperature of 121*F. Ambient air temperature of the unit was 174.8*F, measured using min/max. PIC stated that this item had been in the unit since over two hours prior. Informed PIC that the product needs to be discarded due to improper hot holding. PIC discarded the food at time of inspection. Food was embargoed. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were discarded by PIC at time of inspection
