Inspector notes: Observed staff member switch tasks between accepting payment (handling cash) and handling ready-to-eat (RTE) foods without washing hands. The staff member began placing gloves on their hands without washing their hands. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. The employee washed hands prior to putting on gloves and handling RTE foods

Inspector notes: Observed dishes being actively sanitized at the 3-compartment sink in a quaternary ammonia based sanitizer solution measuring 0ppm. Per the person in charge, the chemical dispenser has not been dispensing the sanitizer. The establishment shall sanitize their food contact surfaces with quaternary ammonia based sanitizer of a concentration between 150-400ppm for at least 30 seconds or per manufacturer guidelines. Instructed the staff to hand dose with sanitizer and verify the concentration with test strips until repairs can be made. The staff rewashed, rinsed, and sanitized the dishes at the time of inspection
