Inspector notes: Observed 3 different types of condiments and bacon in a mini hot holding unit by the main grill. TCS condiments were registering at 135°F at time of inspection while the bacon was registering at 110°F at 10:15 AM. Employee stated the items were all prepared at 8:30 AM. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Advised PIC that the bacon must either be crispy to the touch or heated back up and held above 135°F as soon as possible. PIC instructed the employee to reheat the bacon immediately and the bacon was crispy to the touch
