Inspector notes: Observed several soiled dishes, pans and cups around the hand washing sink. The soiled dishes were moved in order to reach and use the hand washing sink. PIC reviewed the importance of hand washing with employee. Facilities must be maintained in a condition that promotes handwashing. Handwashing sinks must be maintained so accessible at all times, not used for other purposes than hand washing, and supplied with warm water, soap and paper towels

Inspector notes: Low temp mechanical dish machine had a concentration of 0 ppm chlorine while in use. Verified with person in charge's (PIC) test strips. PIC will have recently washed dishes rewashed, rinsed, and sanitized. Discussed having an employee test the chlorine in the dish machine, before it is used to sanitize dishes. PIC instructed employees to return all dishes to the main kitchen to be sanitized. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels
