Inspector notes: Pico de gallo with internal temperature of 51*F in walk-in cooler. The were about 4 pans of pico that were cooling since 12;00 PM and each was covered with plastic wrap not allowing airflow into the container. PIC adjusted the edge of the plastic wrap to allow airflow into container. Please employ best cooling practices when cooling TCS food items to minimize time in the "temperature danger zone"
