Inspector notes: Observed cooked burgers and French fries at 105 - 115 Deg. F. in the hot holding case in the front area. Per operator they were placed in the unit approximately half an hour prior. Be sure to reheat all Time Temperature Control for Safety Foods to a minimum of 165 Deg. F. and maintain at a minimum of 135 Deg. F. The items were reheated at the time of inspection. A discussion was made with the operator regarding the possibility of obtaining a second hot holding unit to help maintain product temperature during service
