Inspector notes: Observed raw comminuted meats (ground pork and ground beef) stored directly above packages of bacon, steaks, and other items in the refrigerated storage room. PIC stated that they are given the direction from the company on where to store the items in the cubbies. Informed PIC that raw animal proteins need to be stored based on final cooking temperature. Explained the importance of raw animal protein storage based on final cooking temperature to PIC and provided the guidance document via email. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code
