Inspector notes: Observed logs for F'real blender B4, per HACCP, not filled out the day (2/6/2025) of the inspection or the weeks before the inspection for alternate cleaning, sanitization schedule, and weekly cleaning procedure. Also could not access the automatic cleaning and sanitization for the machine to ensure the blender is cleaning itself internally every 24hrs. The device will undergo descaling to remove hard water deposit buildup inside the blender as needed to ensure device is clean to sight and touch. High temperature sanitization will be verified weekly by heat sensitive indicators/strips, which will be maintained with the weekly logs, which also could not be verified. The variance approved by the Department requires the blender is to be manually sanitized every 7 days, and the device must undergoes automatic cleaning and sanitization using the submitted and approved process once every 24hrs and must be maintained onsite for 180 days. All procedures in approved variance/HACCP plan must be conformed to at all times. Documentation for critical control points in approved variance/HACCP must be completed, available for review, and retained as required by approved variance/HACCP plan
