Inspector notes: Observed a hot holding unit that had nacho cheese in it that was hot holding according to the person in charge. The internal temperature of the nacho cheese as measured using a probe thermometer of was around 110°F. According to the person in charge, the cheese had been in the unit for more than 2 hours and was embargoed at time of inspection (see embargo form). Discussed with person in charge to reheat nacho cheese on the stove prior to putting it into the hot holding unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above
