Inspector notes: Observed in the food catering walk-in speed racks/shelves , some pans of cooked rte food such as beef and turkey wrapped . passed discard date 10-14. showed manager on duty. removed. discarded. Addl Notes: observed pans of cooked food, prepared on site for the catering such as, cooked shredded bee, cooked chicken breast, Coconut Chicken and, on site prepared pans of salsa, and a pan of on site prepared fried fish, and a pan of fried chicken all without a use by date. showed deli manager, and facility PIC. On site use by date policy, providing a use by date for each rte/tcs reviewed by manager with staff. manager was able to identify cooking dates and all pans were provided with a use by date during the inspection. please monitor use by date on food pans daily
