When chemical methods are used to sanitize food-contact surfaces, the manufacturer's recommendations for sanitization must be followed. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Person in charge relocated all warewashing to three-bay sink to be washed, rinsed, and sanitized until dishwasher can be supplied with chlorine sanitizer
