Inspector notes: Observed dishes being actively washed in a low temperature dishwasher that uses a chlorine-based sanitizer. Upon running and testing multiple times, the concentration was at 0ppm using test strips. Informed PIC that the three-compartment must be used for dishwashing until the machine is outputting an approved concentration of sanitizer. PIC agreed to use three-compartment sink for dish washing until fixed. PIC made three-compartment sink and re-sanitized the previously washed dishes. PIC called in service order at time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels

Inspector notes: Observed pre cooked rice that comes in cold having an internal temperature of 67*F in one of the standing coolers. Person in charge states the rice was prepped earlier in the day and placed in the cooler more than 4 hours prior to the inspection. TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. All TCS foods improperly cooled were discarded by PIC at time of inspection
