Inspector notes: Observed heavy accumulation of grease and dirt underneath the pizza oven and fryers. Observed heavy accumulation of grease and dirt near the pizza prep station in the back corner area of the kitchen. Food debris and other soils were observed in the back pizza dough prep area on the floor and on the walls. Observed food debris in some of the drains as well. Discussed with person in charge to clean on a more frequent basis to minimize food debris and grease buildup in the establishment. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection
