Inspector notes: Observed various TCS foods in the small prep unit by the cook line cold holding above 41°F. Staff discarded all TCS foods which had been in the unit overnight and all hot holding foods, which had been heated this morning, originating from the prep unit (see embargo). The small prep table measured 59.7°F on the min/max thermometer. Alerted owner who stated they will be getting a new unit. Until this unit is fixed or replaced with a unit capable of maintaining foods at or below 41°F, Time Temperature Control for Safety foods are to be stored in alternative refrigeration. The small prep table is important for this operation. A reinspection will be conducted on the small prep unit in 10 days
