As per the person in charge items are only on roller for approximately 4 hours at a time. Taquitos were placed on roller at approximately 8:00am. Heating unit was turned up and taquitos were rechecked and observed to be at 135*F. Advised staff to monitor temperatures with metal stem thermometer, and best practice would be to heat foods to 135*F within two hours
