Inspector notes: Observed food employee begin to handle outside of container filled with cut lettuce after touching raw egg wash with gloved hands. Hands shall be washed at any time contamination occurs and when changing tasks. Food employee discarded contaminated gloves and properly washed hands at time of inspection. Person in charge (PIC) had food employee remove cut lettuce from original container and place cut lettuce in sanitized container. Discussed the importance of proper hand washing and when hand washing is required with PIC

Inspector notes: Observed container of hardboiled eggs with a date mark for 7/7, container of sliced roast beef with a date mark for 7/9, and container of mashed potatoes with a date mark for 7/10. Per PIC, date listed on containers denote day of food preparation. A food shall be discarded if: It exceeds the 7 days at 41ᵒF (except time it is frozen) or it is in a container/package that does not bear a date/day and has been held for > 24 hours and facility has no datemarking system in place. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection

Inspector notes: Observed 1-door cooler used to store TCS foods next to cookline with an ambient air temperature of 47.3°F, per min/max thermometer. Cold holding equipment shall have the capacity to maintain TCS foods at 41°F or below. Establishment shall repair cold holding equipment such that it maintains TCS foods at 41°F or below. PIC contacted technician to repair 1-door cooler
