Inspector notes: Observed two ladles with soiled surfaces stored with clean utensils hanging on the wall above the three compartment sink. Ensure that all utensils stored as clean are cleaned thoroughly, rinsed completely, and sanitized prior to storage. Also Observed multiple clean knives being stored between the space of the three compartment sink drain board and the wall. Knives should be stored somewhere clean and dry between uses and after cleaning/sanitizing. Clean utensils should not be stored against the wall directly above the three compartment sink as food particles and soap can splash from dirty dishware onto the surfaces of the clean utensils. Dirty ladles and knives placed in three compartment sink for proper rewashing at time of inspection. Ensure all clean utensils are moved to a location that prevents contamination. Inspector notes: Observed heavily soiled flooring throughout the L-shaped walk in refrigerator, especially where the two units merge. Also observed soiled flooring behind the main cook line. Clean and maintain clean
