Inspector notes: Observed 0 ppm Quat sanitizer in the 3-compartment sink in the back of house. Quat sanitizer should be between 200-400 ppm to ensure the dishes are sanitized. The PIC made the sanitizer by hand and it tested correctly. Observed 0 ppm chlorine sanitizer in the dish machine in the bar area. Chlorine sanitizer should be between 50-100 ppm to ensure the dishes are sanitized. The establishment needs to order chemical to replace the sanitizer bottle and will utilize the 3-compartment sink in the back of house in the meantime. An out of order sign was placed on the dish machine
