PIC states she purchased some after last inspection and removed them from storage shelf to show me. Employees should be immediately retrained on proper sanitization of equipment, cleaning/sanitizing surfaces, and utensils and proper use and preparation of sanitizer buckets with wiping cloths. FACILITY MUST USE APPROPRIATE TEST STRIPS TO MONITOR SANITIZER in both 3 compartment sink and sanitizer buckets AND BE KNOWLEDGABLE ABOUT REQUIRED LEVELS.
