Inspector notes: Observed all potentially hazardous TCS foods improperly cold holding above 41F in the walk-in cooler (see temp log). Walk-in cooler door was open for the entirety of the inspection; ambient air temperature inside the walk-in was 60F. After closing the door and leaving it shut for 10 minutes, the ambient air temp dropped to 41F. CA: Discussed with PIC. All food was out of temp for less than 4 hours and was moved to the freezer or put on ice to rapidly re-cool.
