Inspector notes: Reach-in-cooler between the handwashing sink and fryers was not cold holding temperatures below 41F, see temperature observations. PIC moved chicken to walk-in-cooler and will have a 4 hour hold time to COS. Chicken was removed from the walk-in-cooler at 12pm and will be used or discarded by 4pm. PIC is having the remaining chicken cooked at 3:40pm to be used before 4pm. PIC already has contacted maintenance to have the RIC looked at and repaired. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. Do not use the RIC until it has been repaired or replaced and is able to function properly and maintain a temperature of 41F or below.
