Inspector notes: Observed Walk-In Cooler with an ambient air temperature of 44, and several TCS Foods (tomatoes, cheese, and raw chicken) temping at 43-45 degrees Fahrenheit. CA: Door sweep is currently in disrepair and the cooler is not able to hold proper temperature. Door sweep needs to be replaced and all cold-held food must be kept at or below 41 degrees Fahrenheit.

Inspector notes: Observed walk-in door with torn floor sweep that leaves a large gap on bottom of door. All doors to cold-holding equipment must have the necessary gaskets/floor sweeps in proper condition to keep units at required temperatures. The torn door sweep is also allowing standing water from leaking mop sink to get into the walk in cooler. CA: Door sweep must be replaced and door should be properly sealed when fully closed.
