Inspector notes: Observed dish machine dispensing 0 ppm Cl- after being ran several times. Also observed quat dispenser above 3 compartment sink dispensing less than 300 ppm quat. For proper sanitation, dish machine must dispense 50-100 ppm Cl-, and quat dispenser must dispenser 200-400 ppm quat. COS by filling up 3 compartment sink manually with 200 ppm quat. Must manually make quat solution until both are fixed.
