Inspector notes: Observed facility lacking a current Certified Food Safety Manager in its employ. Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) as specified in paragraph (b) of this subsection to ensure food safety is being managed within the food service establishment during all hours of operation as specified within paragraph (d) of this subsection. PIC will email copy of CFSM certificate once received. Must correct violation within 10 calendar days.

Inspector notes: Observed food boxes stored directly on the floor in the walk-in freezer. Observed milk in crates and bucket of tea stored directly on floor in the walk-in cooler. Observed cocoa power bags stored on the floor in the bakery area. Observed canned good products and bag of cookie flour stored on floor in dry storage area. Observed several boxes of soft drinks stored directly on floor just outside the dry storage room. Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food: (i) In a clean, dry location; (ii) Where it is not exposed to splash, dust, or other contamination; and (iii) At least 6 inches (15 cm) above the floor. Person in charge properly stored all items at least 6 inches off the floor.
