CA: Clean equipment and utensils shall be stored as specified under paragraph 1 of this subsection and shall be stored in a self-draining position that allows air drying. COS: Discussed with PIC to re-wash and sanitize all the wet dishes and stack them in a self-draining position that allows air drying. PIC voluntarily moved all the wet dishes into the three compartment sink to be properly washed and sanitized.
