Sour cream and sliced cheese was out of temp for more than 4 hours and was discarded. Eggs were out of temp for less than 4 hours and were moved to the walk-in cooler to rapidly cool. Coolers will not be used to hold TCS foods until serviced/repaired by a licensed technician and re-checked by health department. Discussed temporary use of time as a public health control for prep line items in the meantime.
