Inspector notes: Observed the freshwater tank to run out of water and not have enough water holding in the tank for the duration of th event. COS, CA: Unit is vending at a Temporary event (see comments) and PIC placed some water on the griddle to be heated and maintained for the duration of the event to allow for proper hand washing as necessary. PIC shall also ensure the unit is refilled with enough potable water for the intended operations. Water shall be received from the source through the use of: 1. An approved public water main; or 2. One or more of the following that shall be constructed, maintained, and operated according to law: (i) Nonpublic water main, water pumps, pipes, hoses, connections, and other appurtenances, (ii) Water transport vehicles, or (iii) Water containers.

PIC shall that during operation, the unit is able to meet hot water demand by ensuring all components are working properly.
