Inspector notes: Observed a covered plastic container containing chili and gravy that was cooked on 11/02/2025 that was stored in the RIC in the main kitchen holding above 41*F C/A Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F COS: Items Discarded C/A

Inspector notes: Observed two frying skillets stored as clean in a drawer below the griddle in the main kitchen with visible food residue on them. Observed several coffee pots stored in the cabinet as clean with visible coffer residue inside of them. C/A Ensure that all equipment food-contact surfaces and utensils are clean to sight and touch COS Frying pots and coffe pots were placed at the dishwasher for re-washing

Inspector notes: Observed TCS foods such as tomatoes, american cheese, and hash browns cold holding above 41F on the prep top cooler. CA: Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below if cold holding. COS: PIC discarded.

Inspector notes: Observed back door was cracked open. There are gaps in ceiling tiles and opening for a monitor line at the ceiling, and cracks and gaps at coving to floor in some areas. CA: m) Outer Openings, Protected. 1. Except as specified in paragraphs 2 through 5 of this subsection, outer openings of a food service establishment shall be protected against the entry of insects and rodents by: (i) Filling or closing holes and other gaps along floors, walls, and ceilings; (ii) Closed, tight-fitting windows; and (iii) Solid, self-closing, tight-fitting doors. Facility shall seal cracks and openings and ensure back door is self closing within 3 days. Verified during informal inspection 2/7/24 the back door is self closing and cracks and openings were grouted.
