Inspector notes: Observed ham, chili, gravy, chicken, sausage patties being cold held above 41 degrees Fahrenheit in the 2 reach-in-coolers beside the grill. Observed butter being stored at room temperature on counter top at 70 degrees Fahrenheit. COS- butter was thrown away and food was placed on ice C/A: Maintain TCS foods at 41 degrees Fahrenheit and below when cold holding. Establish a procedure for using time as public health control on butter.
