Inspector notes: Improper hot holding of potentially hazardous, TCS foods below 135 degrees observed during inspection. Hot Dog- 116 degrees, Corn Dog- 110 degrees, and French Fries- 105 degrees under cookline heat lamp. Corrective Action: CFSM was notified. All out of temperature foods were found to be less than 1 hour old and were properly reheated to 165 degrees as required prior to hot holding. Discussed proper hot holding procedures for TCS foods. Discussed procedures for time as a control as an alternative for food items held under heat lamp.
