Inspector notes: Observed the sanitizing bucket and the sanitizer in the three compartment sink in the main kitchen with sanitizer at testing below 200ppm C/A A quaternary ammonium compound solution shall have a minimum temperature of 75ºF (24ºC), P have a concentration as specified in DPH Rule 511-6-1-.07(6)(g) and as indicated by the manufacturer’s use directions included in the labeling, P and be used only in water with 500 ppm hardness or less or in water having a hardness no greater than specified by the EPA-registered label use instructions; P COS Manager had another sanitizer dispenser at the vegetable sink and that one was testing at 400ppm. He was instructed to use that sanitizer in the three-compartment sink until the dispenser at the three-compartment sink was repaired/calibrated

Inspector notes: Observed self-standing ice machine starting to develop mold like inside. C/A Clean-in place (CIP) equipment shall meet the characteristics specified under subsection (2)(c) of this Rule and shall be designed and constructed so that: (i) Cleaning and sanitizing solutions circulate throughout a fixed system and contact all interior food-contact surfaces, Pf and (ii) The system is self-draining or capable of being completely drained of cleaning and sanitizing solutions; and 2. CIP equipment that is not designed to be disassembled for cleaning shall be designed with inspection access points to ensure that all interior food-contact surfaces throughout the fixed system are being effectively cleaned.
