CA: Unit stop was closed. RCA: PIC advised to have staff close the unit as much as they can during pauses in the lunch period to allow the unit to keep the food items cold. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below.

RCA: Facility is in need of a deep deep cleaning of equipment and facilities. PIC shall ensure sure equipment is being cleaned at a frequency to prevent the build-up and accumulation of food debris. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
