The ambient air temperature of the unit is 40 F. The unit was left open during lunch hour causing air to exit the unit. The container is also overfilled. All cold-hold Time/Temperature Control for Safety (TCS) foods must be 41°F or below. The unit was closed and the diced chicken reached 39 F. Keep the unit closed when not in use and only fill the container halfway.

Possibly the unit is being left open while not being used, which causes the air to exit the unit. All cold-hold Time/Temperature Control for Safety (TCS) foods must be 41°F or below. Corrected on Site (COS): chicken was moved to the walk-in cooler to reach 41°F in the correct time and temperature. Keep the unit closed when not being used.
