Inspector notes: Observed containers of diced chicken (43 F) inside the prep top cooler. The food item was prepped/portioned today at 10:30am and placed inside the unit. The ambient air temperature of the unit is 40 F. The unit was left open during lunch hour causing air to exit the unit. The container is also overfilled. All cold-hold Time/Temperature Control for Safety (TCS) foods must be 41°F or below. The unit was closed and the diced chicken reached 39 F. Keep the unit closed when not in use and only fill the container halfway.
