Inspector notes: Containers of raw chicken stored inside of the reach in cooler was observed maintaining cold temperatures above 41F. The ambient air temperature of the reach in cooler maintained cold holding temperatures at 47F. CA TCS food items must maintain cold holding temperatures at 41F or below to prevent foodborne illnesses. COS TCS food items were transferred to the reach in freezer and ice was stored on top of the raw chicken that will be used today. TCS food items stored inside the reach in cooler was prepped and stored inside the unit for 1-hour.
