6-1A - proper cold holding temperatures
Inspector notes: Observed potentially hazardous foods* in ice bath and prep cooler not being at 41 degrees (F) or below. CA: Items in prep cooler unit were cut, but the unit itself was temping/had ambient temp at 41 degrees (F). The reason items were out is being they were sitting on top of non-TCS foods on top open shelf of prep cooler. Establishment is not sufficiently utilizing cooler space available. PIC instructed that items in ice-bath were not properly cold holding due to ice only touching bottom of pans and that non temperature control foods (TCS) should not be taking up space in prep cooler needed for TCS foods in limited kitchen space area. COS: PIC threw out both pans of croquettes prepped the day before and time stamped for 4 hours the ice bath items since they were prepped this morning
