Inspector notes: Observed multiple potentially hazardous TCS foods cold holding at greater than 41 degrees Fahrenheit in glass door cooler. CA: Discussed proper cooling methods and cold holding temperatures with PIC. PIC discarded all TCS foods that had been cold holding at greater than 41 degrees Fahrenheit for over 4 hours. All TCS foods that had been cold holding at 41 degrees Fahrenheit for less than 4 hours were moved to other coolers to be properly cooled. PIC will have cooler temperature lowered. This will be rechecked by the Health Department.
