Inspector notes: Handwashing sinks may not be used for anything other than handwashing. Observed the kitchen handsink had a plastic container stored in it. Observed the downstairs bar handsink had a plastic mat stored in it. PIC removed all items from handsinks.

Inspector notes: Observed mashed potatoes and queso in deep pans around 100F. Was informed cooling began within 2 hours before my arrival. With time remaining and cooling methods, it was not possible for food to cool to 70F within 2 hours. COS foods were both reheated to 165F then portioned out into smaller containers and cooled correctly. When cooling TCS foods, they must cool from 135F to 70F in 2 hours and from 70F to 41F in 4 hours.

Inspector notes: Observed multiple food items in a hot holding cabinet out of temperature. Ambient temperature of hot holding cabinet was 145F. Assumed a reheating issue due to ambient temperature of hot holding unit being 145F and foods being in unit for 1 hour. Instructed PIC foods for hot holding must be reheated to 165F before hot holding. COS immediately began reheating all foods to 165F for hot holding.
