CA: TCS foods shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above. COS: PIC discarded all TCS items. Health dept. to check back before unit is to be used/food items are stored in prep top cooler. Advised PIC to keep temperature logs to keep up with food temps.
