4-2B - food-contact surfaces: cleaned & sanitized

Inspector notes: Observed both dish machines (bar and main kitchen) at 0 ppm chlorine sanitizer. Both dish machines were actively in use during the time of inspection. COS: Main Kitchen dish machine was corrected to 100 ppm but bar dish machine remained at 0 ppm chlorine. Informed PIC that bar dish machine cannot be used for sanitizing until the dish machine is repaired.

Inspector notes: Observed TCS foods cold holding at temperatures above 41°F in one prep top cooler (sliced beef 59F, heavy cream 51F, shredded cheddar 57F, coleslaw 48F, ambient 51F). COS: Advised PIC to relocate items that had been in cooler for less than 4 hours to another cooler. All items that were cold holding for longer than 4 hours were voluntarily discarded. PIC was advised to repair or replace preptop cooler.
