Inspector notes: During the routine inspection EHS observed TCS foods (Shrimp, shredded pork and sausage) in a RIC that was out of temp (over 41 degrees F) That was from the night before the inspection. Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above, except that roasts cooked to a temperature . COS: Food discarded and PIC was advised to get the RIC service as it was indicating out of temp (67 degrees F).
