Inspector notes: Observed Person-In-Charge (PIC) not performing duties required by this Chapter and ensuring employees are properly trained in food safety as it relates to their job duties such as proper separation of raw and cooked items, proper stocking of handwashing sinks, proper holding temperatures of Time/Temperature Control for Safety Foods (TCS), proper storage of employee medicine and the disposal of adulterated foods. An additional conversation was had with an employee regarding handwashing procedures which indicated hands were washed in the bathroom due to the absence of hand soap at the cook line sink. It is the responsibility of the PIC to ensure proper handwashing techniques in regards to when and where to wash are upheld to protect food safety.
